Golden Overnight Oats

Blueberry Cloud Bake

Ingredients
  • 150 g Greek yogurt
  • 2 bananas
  • 2 eggs
  • ½ tsp baking powder
  • 1 tbsp honey (or slightly less, to taste)
  • A handful of blueberries

Optional topping: extra blueberries, yogurt, drizzle of honey

Steps
  1. Preheat the oven to 180°C.
  2. In a bowl, mash the bananas until smooth.
  3. Add the Greek yogurt, eggs and honey, mix well until creamy.
  4. Stir in the baking powder and gently fold in the blueberries.
  5. Pour the mixture into a small baking dish.
  6. Bake for 30 minutes at 180°C until set and lightly golden.
  7. Let cool slightly and top with extra blueberries or yogurt if you like.
Spinach Pancakes

Spinach Pancakes
~30 min prep 🍽 2–3 servings 🔥 ~370 kcal per serving
Ingredients
  • 200 g fresh spinach
  • 2 eggs
  • A splash of milk
  • 180–200 g flour (adjust depending on consistency)
  • 30 g butter, melted
  • ½ tsp salt
  • A pinch of sugar

Optional: oil or butter for frying

Steps
  1. Blanch the spinach in boiling water for 10 seconds, then transfer it to cold water to cool.
  2. Squeeze the spinach well to remove excess liquid.
  3. In a blender, blend the eggs, milk, spinach, salt, and sugar until smooth.
  4. Add the melted butter and flour, then blend again until you get a smooth batter.
  5. The batter should be medium-thick - not too runny and not too dense.
  6. Heat a pan with a little oil. Spoon the batter onto the pan and shape the pancakes.
  7. Cook on both sides until golden brown.
